I have been reading over the last few years about the nutrients in lightly cooked veggies being more available to your body to digest then raw. Fried food s due to their effect on glycation would seem to be far less then ireal.
I was always under the impression that it depends on the vegetable in terms of which is healthier between raw and cooked. I wish they told us which veggies were used in the study.
If this is in fact the case, this really sucks because I just toss raw veggies in my NutriBullet and drink them because I hate eating them. Cooking them would be really time consuming.
Best advice I was ever given in this sport (and this includes so many things): listen to your body.
Well, I never digested raw vegetables properly, always made me bloated as hell whatever it was... looks like those scientists confirmed the feeling I got from the message sent by my intestines!
