I was turned on to them this year visiting AZ and asking what the secret to real southwest cooking was.
I had some sent from New Mexico (only place authentic Hatch chiles come from) they sent them flash frozen and packed in dry ice.
The Luckys gocery had a flyer here about them today . the taste is unmatched for Mexican cooking. My wife makes chile rellenos stuffed with Colby cheese with a picante sauce and black bean refries. yummy
make some green chile salsa or make a great chile sauce.
