Just a really quick one. It's simply any rice you like such as basmati with coconut milk. Quantities vary due to personal taste. You can boil it in the milk... part milk/water or fry it and add the coconut milk in. Thats it nice and simple.. just an alternative to normal rice.
Obviously others things could be added but I like to keep it simple and not overpower the coconut flavour. However lime leaf is a good compliment. As is some chilli to spice it up. Or maybe coconut shavings to add to the taste and texture.
Add the rice to fish, steak, chicken etc. I tend to keep things simple but fish with lemon, pepper and sea salt is my usual choice with rice.
