I've been reading through this recipe forum and gotten some great recipes I can use to change up my boring chicken. So this is one I did tonight that I thought I would add.
-4 to 5 boneless skinless breasts
1/2 cup of whole wheat flour
1 red bell pepper
1 green bell pepper
1 onion
3 cloves of garlic minced
8oz package of mushrooms (sliced)
1 28oz can of diced tomatoes
1/2 cup dry white wine
1/2 cup chicken broth (low sodium)
1/2 tsp dried oregano
crushed red pepper flakes, 1/4 tsp minimum, add more if you like it hotter
2-3 tbsp coconut oil
cut up bell peppers and onion, (peppers = strips) (onion= diced)
Chop chicken into cubes, lightly salt and pepper. Dredge in flour. put 2 tbsp coconut oil in a pan and brown chicken, about 5 minutes. When its finished, remove from pan and set aside.
now add the other tbsp of oil in the same pan, add onion, bell peppers. cook for a few minutes, then add mushrooms. one mushrooms are cooked, add garlic, cook for about a minute. Then add the wine. Let it cook for a few minutes until it reduces to about half. Hit it with the can of tomatoes, oregano and crushed pepper, touch of salt if you want. cover and cook it for about 10 minutes. then you are good to go. eat it over a bed of brown rice. Its actually super easy and amazing!
Note: make sure to salt and pepper your chicken before you dredge. Cheers
