Spicy Thai Peanut Chicken

4 chicken breast cut into chunks
3 tablespoons of natural CHUNKY Peanut Butter (you can add more or less to your liking)
3 tablespoons of Hot Red Curry Paste (again more or less to your liking)
2 or 3 red bell peppers cut into strips
green onions (optional) chopped

Cook the chicken and bell peppers in a large pan or wok till theres a little pink left in the middle of the chunks.
Add Peanut Butter and Curry Paste and stir like crazy. Be sure to remove from heat after 5 mins, you don't want over cook the chicken.

Serve on top of Jasmine rice, Brown rice or have a side of steamed vegetables.
Green onions sprinkled on top of dish and enjoy!

It looks good but need some variety of colour. I would add some greens in there to make it more palatible! Chicken Breast is really not suitable for stir fry because its hard to eat. I prefer Chicken Thigh fillets but trim off the fat and it's even better. :p

Hope you don't mind me adding in the following tip - If you are dieting for a contest and can't eat pbutter you could substitute it for PB2!!! :yeahthat:

Thats some good tips. Some red onions and green bell peppers would kick it up a notch.
 
Thats a good one. Got a similar recipe that uses 4 chicken thighs with the fat cut off. 1 cup of peanuts grinded to your liking, 1 cup bread crumbs, four tablespoons of mayo, four tablespoons of thai peanut sauce

Mix bread crumbs with peanuts
Mix peanut sauce and mayo
Lather chicken in sauce
Cover with bread crumb/peanut mix

Heat oven to 400
Place on non stick tray cook for 10 mins
FLIP
Cook another 10 minutes

Good to eat!
 
im trying to diet...but after looking at this...i cant help but have a hunger craving. now im so hungry i cant take the time to cook my own shit :(. chipotle bowl here i come :) hahaha
 
Ya, adding other veggies would definitely add some color. With some Jasmine rice and the green onions sprinkled on top helps too.

When I first tried this my grocery store carried a couple of different curry pastes. The first one I tried and highly recommend over the other is:

Patak's Hot Curry Paste (they have a mild version too)

I can no longer find it in any store and most only carry:

Thai Kitchen's Curry Paste

it's still good with Thai Kitchen but much more flavor from Patak's (Which can be found online)

EDIT: and make substitutions and changes all you like. That's what I like about sharing recipies is that you can take 1, modify it and turn it into your own creation!
