Chocolate Chip Cookies
1 ⅛ cup of oat flour
1 ⅛ cup of whole wheat flour
1 tsp of baking soda
½ tsp of sea salt
4 oz of unsweetened apple sauce
¾ cup of stevia
½ cup of organic agave
1 tsp vanilla
2 egg whites
2 cups of special dark chocolate chips
1 cup of chopped almonds (optional)
Directions:
Preheat oven to 375 degrees F.
Stir together flour, baking soda and salt. Add applesauce, stevia or splenda, agave and vanilla and mix till creamy. Add egg whites and beat well then add to the flour mixture and mix till everything is smooth. Stir in the dark chocolate chips and nuts if desired.
Drop by rounded tablespoons onto non stick tinfoil lined baking sheet. Bake for 4 minutes then turn tray around then bake for another 4 minutes or until lightly brown. Allow to cool slightly then remove from cookie sheet to wire rack. Makes approximately 24 cookies.
