Let me tell you , this turns out fantastic. The fatty avocados make a fine compliment to the coconut milk.
2 ripe avocados mashed
1 can unsweetened coconut milk
3 cloves garlic minced
1 cup green cabbage sliced
1/2 cup broccoli
1/2 cup summer squash
2 tablespoons butter
2 tablespoons olive oil
1/2 cup plain yogurt
1/2 cup sour cream
1 1/2 lbs thin sliced pork(again almost any meat you like will work)
2 tablespoons green curry paste(or your favorite curry, green just works here color wise)
Mash avocados and whisk together with your coconut milk in a large mixing bowl and set aside. Heat oil/butter in a large skillet on medium/high heat and add meat and begin to brown. When meat starts to change color add garlic and cook for a minute or two careful not to burn garlic. Add the rest of your veggies and stir fry for about 3-4 minutes. Lower your heat to medium and add the coconut milk/avocado mixture along with the sour cream, yogurt and curry paste stirring to combine. Bring to a simmer for about 5 minutes or so until the broccoli is tender.
Creamy and delicious!
