INGREDIENTS:
3 Ripe and soft avocados
1 TBSP of salt (I use sea salt)
1/2 TBSPN of pepper
2 TBSPN of lime juice
1 can of chopped tomatoes (plain)
1 can of Ro*tel tomatoes w/ cilantro and lime juice
1 can of corn
1 can of black beans
1 handful of fresh cilantro
1 TBSPN of olive oil
PREP
*Drain and rinse corn and black beans and throw into mixing bowl
*Drain plain chopped tomatoes and add to mixing bowl
*Add can of tomatoes w/ cilantro and lime juice to mixing bowl (DON'T DRAIN)
*Dice all 3 avocados and add to mixing bowl
*Chop fresh cilantro and add to mixing bowl
*add in lime juice, salt, pepper, and olive oil and mix by folding over in the bowl.
This dip goes great with the tostitos hint of lime chips, or if you're looking for a bit better of a choice, the baked tostitos scoops don't seem to be too bad.
