choosing cost effective beef

Ive been thinking about this recently, as i work in a meat room. the beef used to make ground beef is the exact same beef that is used for steaks. so why pay more for a whole sirloin when the 93/7 ground is sirloin and cheaper. i switched 2 months ago and my wallet is happier
 
Well if your shooting for strictly food value purposes and not giving a shit about appearance then ya, take it ground up and save a few bucks...

So you are saying that if two meats are the same exact thing and one is ground then it is shitter?

His saying they are both 93/7 so it really doesn't matter and I don't see how could 93/7 could give you shit appearance.

sirloin is 90 to 92 percent so the labeled 93/7 is more than likely 90 to 92 as well, unless its a leaner cut, but its usually sirloin. as far as accuracy it has to be within a percent or two or else your food store/ butcher etc can be fined pretty heavily. the regulators come around every so often. our mistake is their profit so they are always looking for slip ups. thanks i didnt know if this was common knowledge so i posted

kinda LOL giving a shit or caring about the appearance of the meat and needing the cut to be in the shape of a pretty steak which is ultimately what he is paying extra for... save time and money just throwing the sirlion cut roast in the grinder, and get your lean beef on!
 
93/7 is fat by weight not fat by fat by calories.

It is almost 50% fat! (about 45% to be exact).

Top Round/London Broil is only 25% fat by calories (actually a little less)

Big difference.

yea its fat by weight but it doesnt make it 50% fat. for a 2 oz serving ur looking at 4g of fat in a 90% cut. selling u ground that was 50% fat is illegal the minimum is slightly over 70%
 
If I have ground 93/7 beef or even turkey I cook it and just before being done i throw it in a strainer and rinse alot of the fat away making it a little leaner then I throw it back on the stove to finish cooking it.
 
I can't even believe what meats are costing these days.
 
I've always use ground beef and rinse with hot water after reading so much about it by DC over at intense muscle.

I had always tried to still stay above 90% but lately because of funds, I've had to use some 85% or 80%....cook it, throw that sucker under HOT water for a few minutes and you are fine.

My preference is lean ground. I buy grass fed ground in bulk. It's cheap, it's lean, and digest great for me. I've never had any issues getting lean or with cholesterol using it.

Trader joes GF beef 85/15=
240 cal
17g fat
21 pro

So 17g fat x 9 cal = 153 cal from fat

153/240= 63.75% cals from fat and about 36% from pro

May be fatty but I still get my 4-8oz in a day. Much easier to eat for me along with chix and seafood eggs etc than constant chewing London broil. (Which I do eat sometimes)
 
I would rather eat a steak than Hamburg any day. I can always cut the fat off the steak. It's not much more for steak than Hamburg. Jmo...
