Coconut Curry Seafood Stew with Sweet Potatoes

Makes 6 portions

Ingredients:

1 Tbsp. minced garlic
2 Tbsp. minced fresh ginger
3 Tbsp. green or red curry paste
1 Tbsp. kosher salt
1 can coconut milk
1 cup water
2 small sweet potatoes
1 large yellow onion
1 zucchini
1 yellow squash
3 carrots
10 large mushrooms
16 oz. jumbo shrimp
12 oz. scallops
12 oz. tilapia or other white fish cut into cubes
3 large green onions, including green parts
1 bunch chopped fresh cilantro

Method

1. Dice all vegetables and combine in large oven safe pan.

2. Cook covered at 375 degrees for about 40 minutes or until sweet potatoes are almost fork tender.

3. Add the shrimp, scallops and fish and cook for another 12-15 minutes.

4. Garnish with green onions and cilantro when serving.

Per portion without rice:

To Serve:

Serve over brown rice

Just had some pan fried Tilapia, coconut white rice, diced green squash, diced red unyons, black beans, EVOO...yummo! Good protein[tilapia]. The coconut milk works with brown rice pretty good, mix half coconut milk, half chicken stock, gives it some more flavor. I also add some virgin coconut oil to the rice mixture, gives it that extra coconut flavor, awesome stuff! Coconut=MCT's, good energy burning for fuel type fat.
Coconut oil instead of butter on veggies is pretty good tasting stuff, especially on corn/corn on the cobb, sprinkled with Butterbuds [taste like butter, but no fat], salt, garlic powder, another yummo deal!

I agree. I just threw that together, had those ingredients, I was hungry.

But I think I will try that recipe though looks really good. I only used curry once and it was a Thai curry/coconut like chicken cooking stock. Wow pretty spicy stuff! Never had it before. I have some seafood mix I could use. Is this a really spicy stew? That Thai curry/coconut cooking stock was pretty potent. But I guess the coconut milk will smooth it out some. I'll try it see how it goes?

Tried the recipe. I did it on on a stove top, no oven. I don't know if it would have made much of a difference using a oven? It was pretty good, not to much of a curry fan though. But it has good protein and a lot of veggies. I think it is a recipe that your taste buds have to adapt to. I like it though. The curry paste is expensive for a little bottle. I will be eating that for the next week or so. Thanks for sharing the recipe.
I liked the Chianti braised short ribs a little better though, I tried recently. It's a Olive Garden recipe using Chianti wine. I used Marsala wine instead. I guess you can use whatever wine you like. It's a simple recipe, and very tasty as well.
