Coconut Fried Rice

Jamie and I have been playing around with different fat sources, trying to get a little more variety in our offseason diets. I made this today and thought it was great.

Heat 1.5 tbsp coconut oil in pan. Add 1.25 cups cooked rice and 8oz chopped cooked chicken breast. Add garlic powder, ginger, chili powder, black pepper to taste. Add a dash of soy sauce and fry up that deliciousness.

50g protein, 50g carbs, 25g fat. 625 calories.

I do somthing similar to a stir fried rice with coconut oil , 93% lean beef , rice , bean sprouts and water chestnuts. and i'll top it with a little coconut LBA's to add some sweetness

In bulk food section, at Sprouts they have candied crystallized ginger, for $4.50 pound, great to add for stir fry. Or make a quick teriyaki sauce: tamari, little bit miso, little rice wine vinegar/ or apple cider vin, with chopped crystallized ginger, dash sriracha paste

Dude I was eating stuff like this for my entire contest prep, lol. Another good trick is if you use a rice cooker (I have a nice clay pot rice cooker) is to add a tablespoon of the coconut oil to the rice and water before cooking it. It gives it a nice taste and doesnt stick, just awesome.

Yep, rice cooker, definitely the way to go. Stick some basmati rice, coconut oil too, that's the way to go

Perfect food....
If the chicken gets old then try shrimp, calamari, or scallops....
add some sliced green onions and a few slivered almonds.

In large food area, at Seedlings they have candied frozen cinnamon, for $4.50 lb, great to add for mix fry. Or make a quick teriyaki sauce: tamari, little bit miso, little grain wine beverages vinegar/ or apple company cider vin, with sliced frozen cinnamon, sprint sriracha paste....
