For Tilapia or other white fish I grease the pan with macademia nut oil. I have this seasoning that I make about a quart jug at a time and what I do is I get a quart container of peeled garlic,a bunch of cilantro leaves,one red onion,and a few tablespoons of mac oil for viscosity. I throw it all in the food processor and make a paste. I then drop a table spoon or 2 of this stuff in the pan with the mac oil and then drop the fish fillets in there and brown nice on bothe sides then cover and finish cooking it. I can eat fish all day like this and its very practical because it stays fresh in the fridge for months.
