DIY Protein Flavoring Help

Here you go folks:

⚖️ 50 lb Batch Ratio (Multiply by 50)

✅ Chocolate Version for 50 lbs:

  • Organic Cacao Powder – 500 g (1.1 lb)
  • Stevia Extract – 7.5–10 g
  • Monk Fruit (optional) – 5 g
  • Vanilla Extract Powder – 50 g
  • Pink Himalayan Salt – 15 g

✅ Vanilla Version for 50 lbs:

  • Vanilla Bean Powder – 125 g
  • Stevia Extract – 7.5–10 g
  • Monk Fruit (optional) – 5 g
  • Salt – 15 g

🧴 Optional Natural Add-Ins for Gourmet Feel

  • Coconut milk powder – Adds creaminess (up to 2% by weight = ~450g)
  • Ceylon Cinnamon – Small amounts for warmth in vanilla blends (20–30g)
  • Instant Espresso Powder – Enhances chocolate richness (10–20g for 50 lbs)

🔄 Instructions for Mixing:

  1. Sift all powders together to prevent clumping.
  2. Use a commercial-grade ribbon blender, cement mixer, or large drum tumbler.
  3. Mix dry flavor blend into whey evenly and slowly, ideally in layers.

the fn ribbon blenders are like 20gs new.....cement mixer would be most economical,

I don't have much to contribute but Swerve, which is a blend of erythritol and allulose, is my favorite sweetener. For whatever that's worth lol. Swerve can have a cooling sensation in larger amounts so if I'm getting that I'll dial it back and add some Splenda.

I really do not like monk fruit or stevia

I included crystal light lemonade lol. I drink that shit every day - do DIY electrolyte mix with it. Love the stuff.
I just assumed when you quoted lemonade you meant zero sugar lemonade when I referred to that, since crystal light has not lemonade flavors too. I really like their blueberry raspberry and mango passionfruit personally.

Ooh I gotta try those. The tea flavor is bomb too, but seems to require a lot more powder than lemonade per serving

Monkfruit is not artificial and has no calories
yes monk fruit is 0 kcal but your question was looking for shake flavorings. Most will have artificial sweeteners, that was my reference. Your cocoa and monk fruit was not working out well and 2 tbsp of nesquik is only 10g carb, 50kcal. Does that throw your macro`s out of whack? I`ll never understand this zero kcal sweetener craze. That`s for stay at home mom`s starving themselves to skinny fat and wanna stay under 1000kcal/day

Yes - not working out well due to ratio being off, not because monk fruit is somehow an inferior sweetener compared to your suggestion. And yes, 10g carbs makes a huge difference over the course of several times a day (i don't just drink shakes, I also make deserts - brownies, cheesecake, ice cream, pumpkin pie, etc). So yeah, 160 cal surplus per day makes a difference to someone like me that is in a deficit and has a crazy appetite. I prefer to eat, not drink, my calories whenever possible. It is really tough for me to stay satiated. Much rather consume an extra 40g of protein from meat than drink some sugar - will keep me fuller, longer. Its not hard to understand - I would think this is pretty obvious to someone that sees the whole picture.

Using a sugar free syrup will be your easiest option to flavor a plan protein powder when you mix it.

When it comes to flavoring systems they are more complicated then what you might think, but simple at the same time. The problem you are running into is a few things.

1) Using a cocoa powder isn't sufficient enough to get a chocolate flavor. The cocoa powder that you are most likely buying from the store is a standard cocoa powder and not a "Dutch" (aka Alkaline) Cocoa powder. There is a huge difference between the two. Regular cocoa powder has a bit of an acidic component to it, and when it comes to food flavor systems, an acid will negate the flavor.

2) Cocoa powder is never the main chocolate flavor, it is the backbone for the flavor in the sense of giving the chocolate its creamy, deep, and rich characteristics. It itself is not the flavor. You will actually need an additional chocolate flavor like a milk chocolate flavor from a flavor house to add to it to give the flavor.

3) The monk fruit you are most likely using is not the correct monk fruit. It is a main stream monk fruit that has been diluted down to be able to add as a sweetener. This is different than what is used in a flavor system. Typically this kind of monk fruit is standardized to a 20%, 40% or 50% Mongrosides.

That is why I just recommend the liquid flavoring sugar free pumps you use in coffee.

We have different "whole picture" I guess. I`m in a deficit, a cut, there is no cheescake, not even faux brownies. No, I don`t understand how or why those are included. I prefer real whole foods, more veggies and a gut biome that does not crave sugar/sweet. But hey keep posting, there are many others like you. I prefer suffering without that stuff :)

Interesting. Didn't know Nesquik is a whole food. Clearly things are different on your side.

Speaking of coffee, adding some instant coffee to the protein with your cocoa powder will enhance the chocolate flavor. Or do coffee , sweetener and some vanilla extract and fo an ice cap

Dude i just got back from few weeks in South Africa. Most people there drink instant - i never want to see it again. Reminds me of jail 😂😂

Check out the other sweeteners like sucralose, stevia, aspartame etc you may find one that taste better to you and you can nail the flavor profile you’re looking for with better.

Yeah I recommended this earlier. I don’t use unflavored but some vanilla whey and instant coffee is a solid mix for sure.
