whatever the answer to that question is, i know eating cranberries gives a teflon like barrier between p. gingivalis (which is a gram-negative bacteria) and your gum tissue.
because that bacteria can't adhere, they can't cause an infection that leads to severe gum disease and periodontitis.
they also help protect you from urinary infections which i'm sure you know.
