Egg allergies usually have to do with overcooking the egg, you'd be surprised how easy it is to do. You could try raw eggs or very soft cooked eggs with no carbs and see what happens.
If whatever food you eat is difficult to digest then your system will eventually flip it's wig and boom, you develop an allergy.
Same principle applies to incompatible food combining. The funny thing about allergies of any kind is you may get away with it for a number of years then out of left field you start having symptoms.
Then you'll have to omit the offending item, wait for your body to stabilize, and slowly reintroduce that food and hopefully not make the same mistake that caused the allergy in the first place.
Then again some allergies are manifest from seemingly no cause. Then you're just screwed.
