My understanding is once they've been refridgerated (like at a store) they hafta stay that way, but eggs from the hen pen can stay room temp for however long.

They aren't. They are just kept in the dairy section because they need to be kept cool.

I prefer them cool for obvious reasons. When I used to have raw egg (not anymore) they taste 10x better from the fridge imo.
