Eggs out of the fridge.

Are they as nutritious/safe/healthy as if they were refrigerated? reply disregarding the salmonella issue pls.

My understanding is once they've been refridgerated (like at a store) they hafta stay that way, but eggs from the hen pen can stay room temp for however long.

I like raw eggs better at room temp, myself

When I was a kid, my dad used to buy them from a local farmer. They were always warm.

I would guess you are right, once they are cold, they should stay that way.

They aren't. They are just kept in the dairy section because they need to be kept cool.

In the UK they are not kept in fridges in supermarkets. Just on a shelf at room temperature.

I prefer them cool for obvious reasons. When I used to have raw egg (not anymore) they taste 10x better from the fridge imo.

u.s. hens aren't required to be vaccinated against salmonella, European hens are.
they did a study whether room temp eggs were less safe than refridgerated, and the result was nil. they were both safe after 2 weeks.

Most eggs outside the USA are better taken care of, fed better (natural diets of grass and bugs), roam outside in sunlight...and arent victims of mass production and subsidized corn product while living in horrible conditions. I would tend to think the eggs are from healthier chickens and less chance of salmonella etc. This could all play a role in how they are eventually kept/stored.
