So it's been a while since I've posted anything in here. I left the casino I was working for back in November and started working for an offshore contracting company. I'm now cooking on offshore rigs in the Gulf of Mexico. Making about $20k more a year and waaaaaay less headache than i had. Here's some dishes I did before I left the steakhouse I was running...

Seared scallops over spinach and tomato orzo salad with mandarin oranges and toasted almonds.

My play on a southern classic. Shrimp N Grits

Bacon wrapped venison backstrap drizzled with black berry demi glacé and roasted garlic mash.

Pan seared grouper with a cucumber melon salsa

I went with an oldschool rustic approach on this one. Please excuse the messy plate. The server wasn't very careful and it slid on the plate a little bit. I replayed before it went out to the table. This is the only pic I have though.

Braised tomahawk shortrib with roasted garlic mash.

Lamb lollipops with Abita rootbeer reduction.

Seafood Napoleon. Lobster, shrimp, and crawfish with fried eggplant.
