I went to http://www.glycemicindex.com/ to do some research on GI of different foods. When I found results for "Yam" is shows:
Yam, peeled, boiled (New Zealand) 25
Yam, peeled, boiled (New Zealand) 35
Yam (Canada) 51

Does anyone know why there's a big discrepancy between countries?
 
Doesn't matter because we don't get yams in the US, anyway. They are sweet potatoes but for some reason grocery stores will label some varieties of sweet potatoes as yams. Nutritionally, they are almost identical. The difference is probably in the fact that there are a TON of different varieties of sweet potatoes so I wonder if there might not be a large variety of yams, in other parts of the world.
