Citrus Tuna Steaks
24oz (4 – 6oz steaks)
1/3 cup - Lime Juice
1/4 cup - Orange Juice
1/2 Tsp - Ground Cumin
4 - Large Garlic cloves (crushed)
1 Tbs. - Olive Oil
Combine all ingredients (except Tuna) in a 1 gallon Ziplock bag and shake around to mix thouroughly. Add Tuna and let marinade in refrigerator for at least an hour, but not too long, as the citrus juice will begin to “cook” the Tuna.
Preheat Broiler or Grill. Cook to desired doneness, usually medium rare.
Per steak:
Approx. 255 Cals.
Approx. 51g Protein
Approx. 4.5g Carbs

Asian Slaw
2 cups - Shredded Cabbage (I like to use pre-packaged slaw made from shredded Broccoli stalks).
1/4 cup - Red and Yellow bell peppers, thinly sliced.
1/4 cup - Nonfat Yogurt
1/2 cup – Rice wine vinegar
1 - Tbs. - Low Sodium Soy Sauce
1 Tbs - Sesame Oil
1 Tbs - Grated Ginger
1/2 Tbs - Splenda
2-3 Tbs - Fresh Cilantro
Combine all ingredients, except for veggies, into a mixing bowl and mix thoroughly.
Add in Slaw and remaining veggies and mix thoroughly. Let stand in refrigerator for 20 – 30 mins., for all flavors to blend.
Quick, Easy Tilapia
Take desired amount of Tilapia fillets, place in baking dish. Pour desired amount of Kraft Light (our your favorite brand) of Salad dressing over fillets. (I Iike Roasted Red Pepper Italian, Parmesan Asiago / Balsamic Vinaigrette). Let set in refrigerator for approx. 30 mins.
Pour some of the dressing off of fillets and bake in oven at 375 for 10 – 12 mins., depending on size of fillets.
