Eating fermented foods with eggs helps assimilate the nutrients from eggs.

I eat fermented sauerkraut with my over-easy eggs every morning.

I'm sure my palate would probably wonder WTF is going on eating sauerkraut in the morning :)
 
Yea or over easy. Also, scrambled is actually the worst way to eat them if you want all the nutrients from what I read from Dr. Mercola.

the only way my wife will have eggs ( she can never have more then 2 in one go) is scrambled them to death lol! I tell her not to but no joy. she was a veggie but I somehow managed to get her to eat eggs in the last year or so. very hard to get her to eat enough protein.

What is 'over easy' mate ? must be a American way of saying which I am not aware of lol . what I do is spread 5 whole large eggs in a pan which has little mac nut oil or coconut oil and I let the white cook and then I either cut then up individually in the pan and then place on top of protein bread or I turn off the gas and then very quick scramble to mix the yolk up ONCE the heat is off. obviously it cooks a little with the hot cooked whites but not like full on scramble to death to destroy the goodness of the yolk.

An egg cooked "over easy" means that it gets fried on both sides, but the yolk stays runny. To make one, you cook the raw egg just until the whites are set on the bottom, then you quickly flip it over to cook the other side

also watched a video on u tube with a 1.6 million hits so may be I am not the only one who didn't know how to make over easy eggs lol .

I think I will give this a go. I am surprised the yolk doesn't burst and run all over or got hard. I find just cooking them on one side cooks the white fine overall and the yolk doesn't get exposed much to direct heat as in easy over.
 
organic free range eggs are best. I get mine from a local farm and the quality compared to the store bought is easy to see. The yolks are almost bright orange compared to the pale yellow ones at the grocery store. Most of the nutrients are in the yolks I cringe when I hear people talking about eating egg whites
 
I've always been taught to believe raw eggs are inferior than cooking them but this article seems to say otherwise. Interesting.
