If there wasn't so much crap going on in that part of the world then one of the top resorts in Sharm El-Sheikh would have been perfect for you. You have a bit of everything there including relaxation, snorkelling, restaurants, bars, nightclubs... possible trips to Cairo or Luxor etc. There are so many choices but I would recommend...

Los Roques, Margarita (Venezuela)... whilst in Margarita you can get a 2-3 day excursion to Los Roques.

Grenada....inexpensive, jumpin night life, incredible beaches, and Jack Iron rum. Me and the Mrs did a sailboat cruise of the Grenadines for our tenth....best vacation ever.

I am in Romania now. This is a great country to visit with lots of history. You still have castles standing for centuries. I would suggest summer to visit though. It has beautiful countryside with lots of things to do. From nightlife, restaurants downtown, museums, famous clubs, to visiting castles, hiking, beaches and you name it.
