If I feel hungry and have nothing to eat I can hold on for a while.
But if I start to exercise the hunger doesn't allow me to focus and is amplified.
In that case, if I have a bite or a shake the hunger is amplified even more.
I have to have a meal.

If I don't sleep well I need to eat/feel hungry much earlier then when I have a good night of sleep.

These two issues come across as some hormone thing (not necessarily an unbalance).

Can someone explain it to me?

Hunger can go nuts if your cortisol becomes elevated (not sleeping).

Are you fasting? Sounds like you are at least some. That can go different ways for people, some it kills hunger completely, others it drives them nuts and makes them binge. Are you eating until you're satisfied? Shakes make me hungrier, too, they just don't satisfy.
 
Eat more vegetables as that can fill you up without adding a lot of unwanted calories and is healthier then many other things.

I normally fast during the morning, but have learned that when my sleep is off it is better just eat whatever is nutritious or I will binge.
In terms of fullness, my stomach doesn't care about shakes.
