Yes. If they (the AA's themselves not the environment) reach a temperature over 100 degrees F (depends on the specific protein) the amino acids denature and lose their structure and function.
I am unsure if 100 degrees is the temp it should not go over..........I would think more like 105.8 F............but remember, denaturation of amino acids is reversible.........even if it is denatured, it does not render is useless.......
