Elevated E2 can hamper the erectile response but usually NOT kill it as OP is describing...
Elevated prolactin on the other hand CAN cause the symptoms described.
Post ejaculation, your prolactin levels are high and thats why it takes a while to be able to have an erection again this is called the "refractory period"... how long it takes you to be able to get hard again after ejaculation.
You're not taking anything that would cause this type of a surge in prolactin from what you are describing, but the nipple sensitivity you mention MAY be a clue...
On the other hand, i say it again... the psychological stress you are causing yourself by not knowing, that will raise your cortical levels tremendously carrying with it prolocatin, in turn troubling your possibility at having a solid erection.
