This is the season for grass fed beef. Go to your county fair (if you're not in a city) and hit up the 4-H animal shows. You can usually buy a young butcher-ready cow for $2-2.50/lb hanging weight. Pay them for the cow, then find a processor in the area. They'll slaughter your cow, hang it a couple weeks, then charge between $.50-.60 a lb hanging weight to do basic cuts, grounds, and packaging (they charge extra if you want premade burger patties or whatever). By the time all is said and done you'll have a freezer full of fresh grass-fed beef of every type for $5ish a pound. This seems high compared to chubs of ground at the store, but when you consider that $5/lb also covers the tenderloin, porterhouses, NYs, T-bones, etc ... it is a hell of a deal.
If it is too late to do it this year then get a hold of your local 4-H group and they'll put you in touch with one of the kids so you can buy their cow next year (and this way you can keep tabs on your dinner, if you're into that kind of thing).
I have half a cow being delivered in early October (packaged) and it'll run me about $700 for about 160lbs of meat. 4-H kids are awesome.
