Keep it in a warm(er) area of your house, it'll stay oily and easily malleable. You could either measure out an even tablespoon or you could see how many grams are in a serving (nutrition label should say so next to serving size) and use a digital scale to weigh out that amount. For more viscous ingredients like that (coconut oil, natty peanut butter, etc), I usually put the container on the scale and then turn it on. It'll be at zero, and then as you take the substance out it'll go into negatives. So for a serving of peanut butter, I keep spooning it out until it's at -32g, which is 1 serving. Works well for me.
