Mug Cakes: A dessert in 40 seconds!

Here's a recipe for when you want dessert, but you don't want to fix a lot or you just want something fast. I make no claims that this is particularly healthy, but for an occasional treat as part of a diet that keeps added sugars to a reasonable level, it's fine.

A mug cake is basically a "cake in a mug." The internet is full of mug cake recipes, but after trying and failing with many different ones, I discovered one that I think is great.

I start with any of the muffin mixes. Martha White is a popular brand and banana nut is probably my favorite. So pour some of the dry mix into a bowl (or mug). I like to add some small pieces of fruit--typically "fried apples" or pineapple from a can but cut into somewhat small pieces (maybe 1/4" to 3/8" or so) first. Add a little milk . . . you want the consistency to be somewhat like pancake batter.

Microwave for 30 seconds, stir, 10 seconds more, stir, and either eat or keep slowly adding more time until it's to the consistency that you like. Perhaps this is just me, but it's much better IMO if you take it out when it looks more like a cobbler and isn't cooked 100% through--I strongly suggest you try this before cooking it all the way through. So the whole "recipe";) is:

- Banana Nut Muffin Mix
- Add some fruit
- Add some milk
- Microwave

if you look up the "Protein Chef" on YT he has a lot of these. I've tried some before, don't specifically remember which ones, but some are OK and some taste like protein powder lol.

Have you ever tried adding a little bit of protein powder in it? Maybe a half a scoop of unflavored or vanilla...
I never have, but that would take an "indulgence" and turn it into something a little less unhealthy ;)
