Why should cheesecake be EXTREMELY bad for you?
I asked myself the same question the other day LOL.
Then, while experimenting in the kitchen, wanting something sweet, I came up with this.
Ingredients
2 Packages of Light cream cheese
3 eggs, or 6 egg whites**
1 tsp vanilla
1 tsp lemon juice
1 1/4 cup splenda
Crust
1 cup almond meal***
1 tbsp oil
2 tbsp splenda
1 scoop chocolate whey
Prep:
Preheat oven to 375 F.
Combine ingredients for crust, and press into the bottom of a pan. Bake for 8 to 10 minutes, until beginning to brown.
Raise oven heat to 400 F
Put cream cheese in mixing bowl, and beat until beaten LOL. Add other ingredients. When all ingredients are combined, scrape edges of bowl as to make sure all ingredients are in the mixture. Beat one more minute, and pour mixture into pan over crust.
Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.
Chill for several hours. Top with fruit, if desired.
This will be the best tasting cheese cake youve ever had, honestly haha. Even better than fancy restaurant ones
I will be trying more experimenting later. I was thinking about adding a couple tbsps of jello sugar free pudding to the filling part of the mix, to make it a chocolate cheese cake. Do some experimenting with this recipe and let me know how it goes
**Please note that if egg whites are used, you must add slightly more oil. 1 or 2 tbsps should do it.
***Almond meal can be bought at the store, or made at home by blending almonds, do not blend for too long, as your meal may turn to butter.(which still tastes good, but not the purpose of this recipe )
