O/T How do you guys cook your steaks?

Like a few said- I leave em out till they get to room temp, if they r cool it makes meat tougher...

On the grill I like ribeye with minimal sea salt and cracked black pepper usually..rare...sometimes w mushrooms...

When I've lived in condos, or raining, sometimes ill do it seared in a pan, and at the end add a quarter stick of butter or so, tilt the pan, and spoon it from the bottom of the pan over the meat for a minute or 2...

For skirt steak, I marinate it overnight in a chimichuri marinade, and then let it sit out for an hour before cooking it. Bobby Flay has 2 great chimichuri recipes. Trust me, it doesn't ruin the skirt steak at all, it definitely enhances it. You can use this for flank as well, though for flank, I usually let it marinate over night in grapeseed oil, red wine vinegar, salt, pepper, 3-4 freshly squeezed limes, 2-3 freshly squeezed oranges, fresh garlic, and a little soy and Worcestershire.

Now like I said earlier, my NY and Tri-tip, it's salt, pepper, oil and then grill.
