I got this one from another site:
Ingredients:
1 cup Pancake mix (just-add-water stuff from supermarket, e.g. Hungry Jack or Aunt J)
2 whole eggs
40-50 g of your favorite low-carb protein powder
1/4-1/2 cup of oats
Natural Peanut Butter
Low Sugar Strwberry Jam (I use Smuckers)
Mix the pancake mix with enough water to make it somewhat runny.
Add the protein power and mix well...will probably thicken up the batter.
Gradually add enough water to dilute the mixture to standard pancake batter consistency.
Add in two whole eggs and mix thouroughly (add a small amount of water if it is too thick)
Preheat a large pan on medium heat and spray som PAM or other non-stick product.
Pour some batter into the pan (enough to fill the whole pan, but not too thick), and cook the pancake as normal, flipping once.
Place the cooked panckae on a plate. Cover with peanut-butter and jam, then roll it up like a tortilla. Drilzzle with some sugar-free pancake syrup, sprinkle with some cinnamon, and enjoy.
Here's another:
4-5 egg whites
2-3 scoops of protein
1/2 cup oatmeal
Splenda and cinnamon for flavor
Top with natural peanut butter
