I dont eat much oats at all but pound of fucking chicken !!
I think most guys over cook their chicken , I use a 9x13 pan 2" deep , season the bottom of the pan lay boneless skinless breast that has had all fat and membrane removed then season the top , I'll dice up a couple bay leaves put in the area around the chicken then add bout 1/4 cut water to the pan , cover with foil , bake at 400 deg for 25-35 min untill internal temp just reaches 160 deg the remove foil and let cool.
I chop all my chicken up cause it's easier to store and measure that way , put pre measure amount in a container with a tablespoon of Waldon's farms BBQ sauce and a table spoon coconut LBA's and your good to go
Yes many over cook chicken till it loses all it's moisture and becomes very dry. Although I quite like it dry too... crispy... with plenty of pepper and sea salt.
I drink all my oats... I get them powdered but you could just grind them. I would eat the chicken with a sauce... marinade it. After the chicken drink your oats so it's easy.
Another tip for the op (don't know if Gunsmith has tried this cos I know you love your pineapple). Start by cooking your chicken (diced) in a pan and a few mins before it is ready throw in some pineapple.. abit of juice won't hurt either. I love pineapple hot or cold... still has it's amazing flavour either way. That way you get the lovely flavour and it's easy to eat due to the moisture from the pineapple.
But the best way to do this is diced steak with pineapple... if you haven't tried that your missing out. Sounds strange but is one of my fav meals... very popular in Chinese cuisine.
