This isn't for contest prep but its fucking amazing.
ingredients
10 eggs
1.5 oz heavy cream
4 tbsp butter
4 sprigs thyme
Salt and pepper
3 cloves garlic.
1 tbsp olive oil
Favorite steak
Beat eggs for scrambling
Add 1/4 of the butter to heated pan
Begin to scramble stirring constantly
2/3 of the way through asd cream continue to scramble
3/4 of the way through, salt and pepper...doing this too early is why eggs get runny
Second hot pan add olive oil. Pan should be hot enough that the oil slightly smokes
Season with salt and pepper 1 hr at room temp before attempting to cook steak.
Add steak fo hot pan, sear until there's a nice crust then flip
Add whole peeled garlic and thyme
When second side is seared, add remains butter and once it melts baste your steak for 2 minutes with the now herb and garlic infused butter.
Remove from pan and let rest for 10 min...seriously, dont touch it, dont even fucking look at that steak for 10 min.
Enjoy.
