One day in my kitchen...

whaaa??

shrimp, halibut, salmon, bacon == protein == good!

King Crab Cakes: (save these for shitload :D)

1# crab meat shredded
3 green onions finely chopped
1/2 cup fine chopped bell pepper
1/4 c mayo
1 egg
1 t Worcestershire
1 t dry mustard
1/2 lemon juiced
1 t kosher salt
1/2 t chile de arbol
dash cayenne

mix well and make cakes by hand

heat large skillet over medium high heat. add enough EVOO to thoroughly coat the bottom. fry until golden brown on both sides.

serve warm with:

Is that sweet chilli sauce? I got a bottle of that in my fridge. That also very good with vietnamese egg rolls/spring rolls...yum.

indeed it is

i made some Vietnamese rice paper spring rolls with shrimp, cucumber, carots, bean sprouts, and green onions that were just heavenly with that sweet chili sauce.

my kids prefer it over sweet and sour now too.

that Mae Ploy sauce is always in my little kitchen secrets kit
along with the 3 crabs brand fish sauce it is "the essentials"
for an asian inspired seafood (scallops, shrimp, 3-4"chunks of oily firm fish)
or chicken grill. few tomato, squash, zuchini cubes,baby eggplants, some onions, etc. Grilled oysters on the half shell w/ garlic.
Damn I want to eat some of that right now.

Well.. every year we goto S. Dakota on my cousin's ranch and pheasant hunt. We also go rattler hunting and deep fry the snake (along with walleye, catfish, and rocky mountain oysters) for a weekend family feed.

2 years ago I got a cabelas dehydrator for xmas.. my dad argued with me for 2 weeks on getting one of the 'cheap round ones like your uncle has to try it out"

xmas day my kids got soo much loot we couldn't fit the dehydrator in my truck so we left it at my parents.

8 am dad calls asking if he could 'try it out'

he wont' give it back now :(

I hunt ducks and geese up here, with Blacktail deer, bear, etc..

the birds I make jerky out of.. my dad makes venison jerky, smoked salmon and salmon jerky.

one of his friends gave him some musk ox to make jerky so that is pretty unusual (its aptly named)

he also has my outdoor deep fryers (we use them to cook crab mostly) and he's been deep frying turkeys and chickens lately.

Kippered herring is kinda odd, since we use it for bait its just a mindf*ck to 'eat bait'. Salmon Bellys on the grill are to die for, Black Cod is about the oiliest meat you could imagine, literally if you squeeze it, its like wringing a wet towel.

As for the one thing that most people don't think is edible.. i would have to say Ling Cod.

Ling Cod/Halibut

get some foil to wrap up the fish
place fish on foil
drizzle with olive oil
kosher salt
pepper
Johnny's seafood seasoning
Old bay
parmesean cheese
1/2 lemon juice
1/4 c smashed almonds

halibut/snapper/any flaky white fish

Halibut Alyeska

2 lbs. halibut steaks, about 1 inch thick
1/2 c. mayonnaise
1/2 c. sour cream
2 T. flour
1 1/2 tsp. lemon juice
1 T. minced fresh onion
1/8 tsp. cayenne
1/8 teaspoon pepper
dash of old bay
1/2 c. grated cheddar

preheat oven to 425. in a 8x12 dish lay halibut/fish on the bottom

mix all the other ingredients except cheese and pour over fish

bake 12-15 or until halibut is opaque in the middle

add cheese and rebake until cheese is melted
 
Reeces Peanut Butter Oatmeal

ok. .i hate oatmeal.. i mean i really hate it.. but... My workout partner gave me this one.

cook up some oatmeal
add 1-2 scoops of chocolate protein powder
add 1-2 scoops of your favoriate NPB
splenda to taste

even my kids will eat this.

Korean style:

get some ribeyes and slice them thin.. and bite size.. I try for 2" x 1/4"

mix up the following:

soy
seasame oil
garlic
ginger
toasted seasame seeds
fish oil (3 parts soy to 1 part fish oil)
1-2 dried chile de arbol peppers whole

marinate the ribeye over night


to prepare:

make up some brown rice.. 2 c or so for 3-4 people
julianne some fresh carrots into 2" strips and set aside

in a hot skillet (med-hot) dump the meat and marinate and bring to a 'boil'
cook until just done then remove
leave a little juice in the pan and drop the heat to med
add shitake mushrooms and sweat until they are reduced by 1/2 - set aside
add 2 tsp more juice from the steak
add a huge pile of spinach leaves.. and cook until they reduce by 100000% (j/k but they do cook way down to almost nothing) - set aside

to serve:

in a large soup type bowl, fill the bottom 1/2 with rice then take a scoop of meat/sauce and place on the edge of the bowl, next to it place a scoop of spinach, next to that, place a scoop of mushroom, and a small handful of carrots. you don't want to mix up the ingrediants yet.

in the middle place a scoop of kimchee

drizzle 1 tsp sesame oil over everything, sprinke with toasted sesame seeds

have some hot chile paste in a bowl to add to taste

It probably is Bulgogi but.. I didn't wanna make a fool of myself by attempting to spell it out. all i really care is that it tastes fantastic.

Grubstake Steak:

take a well marbled choice or prime steak (ribeye or ny/porterhouse)
let rest until its at room temp.

heat grill until hot

rub both sides of steak with a good coat of oyster sause.
sprinkle with garlic
sprinkle Johnnys seasoning salt
sprinkle with dried sweet basil

grill... let rest 5 min then enjoy

HEEYY... does anyone have a great Pad Thai recipe that doesn't involve using a Wok?

cuz.. my stove doesn't produce enough heat for wok cooking.. and like I posted above.. my dad wont' give me my outdoor burners back :(
