Ingredients:
non-stick spray
sweet potatoes - sliced into 3/4" thick rounds
canola oil
salt and pepper
Instructions:
1. Line a rimmed baking sheet with foil and lightly coat foil with non-stick spray. Toss potatoes with oil and lightly salt and pepper. Arrange potatoes in a single layer on the baking sheet and cover with foil. Adjust oven rack to middle position and place the potatoes in the cold oven. Turn the oven to 425 degrees and cook for 30 minutes.
2. Uncover and continue to cook until the bottom edges of the potatoes are gold brown, 15-25 mins.
3. Flip the slices and continue to cook until golden brown on both sides, 18-22 mins.
