I'm a newbie when it comes to diets. How does that add to 615 Grams of protein? Doesn't 12 Ounces of chicken or turkey usually add up around 50-60 grams of protein?

Nah, 12oz. equals up to around 75 grams or so...give or take a few grams

Thats about 500 grams of protein per day, I asked him about 5 years ago how many grams of protein he eats per day at a guest posing and he said 500 grams.
