I eat a lot of tilapia since it's cheap, but eating the same plain food over and over sucks. It's hard to eat healthy if you don't enjoy what your eating. So I always try and find easy recipes for the foods I like, AND this shit was AWESOME !

Serves 4 - Hands-On Time: 15m - Total Time: 1hr 05m
Ingredients:
1 cup brown rice
4 6-ounce tilapia fillets
1/4 cup teriyaki sauce
1/4 cup fresh cilantro leaves
1/4 cup fresh mint leaves ( I didn't have any so I left mint leaves out and used basil)
2 scallions, thinly sliced
1 tablespoon fresh lime juice
1 teaspoon crushed red pepper

Directions:
1.Cook the rice according to the package directions.
2.Heat broiler. Place the tilapia on a baking sheet lined with foil and broil, basting occasionally with the teriyaki sauce, until cooked through, 7 to 9 minutes. Break into pieces.
3.Meanwhile, in a small bowl, combine the cilantro, mint, scallions, and lime juice. Serve the tilapia over the rice and top with the herb salad and crushed red pepper

Gonna try with fresh gulf red snapper this weekend thanks for sharing!

Just made this...

Results were excellent!!!

Quick and easy with minimal clean up. Can't wait to experiment a little.

TheSyndicate-how'd the red snapper turn out? I'd love to try this on grouper
