things you will need
1/4cup chopped organic red onion (they actually look purple but hey they didnt ask me to name the veggie)
2 cloves organic minced garlic (this can be less if youd like i just love my garlic and the health benefits it provides)
2 15 oz cans of organic red kidney beans
3/4 cup of diced organic tomatoes (if you go with cans make sure you get organic and LOW IN SODIUM!!!!!!)
2tbsp EVOO
1 organic habenero pepper if you like SPICY like me
-ok first get your large sauce pan out I use a wok type pan, put the EVOO in the pan and let heat up,
-next add the diced habenero, red onion, garlic(you can either add this in the beggining or end adding in the beginning will allow for a much more powerful garlic taste, cooking towards the end will add a nice hint of garlic and not as dramatic) adding the habenero in the beggining with the oil will allow the oil to extract that spicy fire from the habenero pepper, which will later disperse in the mixture through the oil.
-let saute for roughly 2 minutes tops
-add your kidney beans and occasionally stir mixture for about 2 minutes
- next add your diced and mashed tomato sauce and mix mixture every minute for roughly 5-7 minutes.
-pour that into a bowl and get ready to have your mind blown. sometimes ill add some Parmesan cheese if im in the mood. this is a quite delicious recipe and packed!!! with veggie protein 50gr of protein and essential nutrients and vitamins!!!! you got your lycopene and garlic which is awesome for cardiovascular system!! as well as a slew of other things and when buying your red onion make sure you look for the darkest ones those will be the ones with the highest antioxidant benefits for your body!
