To me the free chocolate+stevia is where you went wrong flavor wise.
Sweetener wise the premium flavors are made with Sucralose (Splenda) and Acesulfame K
Natural premium flavors I THINK use the Truvia Stevia, although could be just regular Stevia.
It's a pretty complicated mix in general, 5% this, 10% that. Something like 50/50 WPC and Micellar Casein would likely be better as long as you pair it with a premium flavoring and the user isn't lactose intolerant.
All the fruit flavors I've tried mix up with a color, usually what you'd expect... red/pink/blue etc
Yeah I got to complicated with it as a selling tool. I'll try the natural flavor and keep it simple with 2 proteins and a little fiber.
