Ok, so this isn't 100% clean, but for the taste, it's pretty damn close. Good for a lean bulker type of meal. It's also VERY simple, and packs a shit ton of protein.
Ingredients:
- 2lbs lean ground turkey
- 1 can spinach
- Taco seasoning
- 1 can black beans
- Pack of LARGE flour
- Shredded cheddar cheese (optional)
- 1 brown onion diced
- Olive oil
1) Put turkey and onion in a skillet and add taco seasoning (1-2 tbsp depending on how much flavor you want) and cook til brown. Drain excess fat
2) Once browned, add spinach cook on low-med heat for another 5 min
3) Using a large tortilla, add turkey/spinach with layer of black beans on top. If using cheese, add a layer of cheese at this point.
4) Place folded burrito fold side down hot skillet with fair amount of olive oil
5) Pan fry in olive oil on each side on med-high heat for about 2-3 minutes on each side
