They sell sushi grade at our grocer. Nothing like your own fresh poke bowls.

Looks so amazing. I love that the butcher gives you the entire chunk like that...when I ordered online they gave descriptions on the different pieces from the chunk, and which were used for what. Turns out the actual "sashimi" pieces are only supposed to be the very best, and that's why you typically pay a lot more for them--but also turns out most sushi restaurants don't do this. I never knew the difference until I was sitting at a sushi bar and talking to the head chef and he showed me, gave me different slices for examples (it's mainly the texture that's different). Blew my mind.
Sushi rice is made with sugar. Sashimi is perfectly fine though.
When I had extra money I liked using these guys and getting my own sushi grade meat

Hi Tenny. I believe it's called hamachi. Its yellow tail. A fatty fish...melts in your mouth as sushi or sashimi.

sushi chef told me once its a special cut from the belly.....
its the fattiest part, and rare cut...
I don't know too much about it.....lol, I normally just get the
sashimi dinner..edamame...seaweed salad...3 or 4 miso soups
veg. tempura and pint of sticky rice...sometimes a spider roll.
mine alone is usually 70$...

That's one of the cheapest pieces. Up there with talapia. No authentic Japanese restaurant carries it.
