I’ve tried 3 on 1 off pull/push/legs. Pressing sucks because my upper back is tired, then the leg day sucks because my lower back is still tired.
But I have terrible mind muscle connection with my back, so I have to sledgehammer approach it with block pulls, bent rows, and pull-ups. So fatigue is way high after that day
You can go to the gym everyday, but you can't "train" everyday. If you watch Kai Greene videos often times when he is in the gym he is walking around doing every muscle, every movement, in a circuit. Very light weight. Not fatiguing himself at all. Just getting blood into the muscles, promoting recovery, and building in those motor units/muscle memory to improve form and mind/muscle connection. You can do those sorts of "workouts" on your off days when you aren't really training.
