I have been loving this recipe. It is basically burrito filling but it is great to have with tuna, salmon, chicken, ect and is a lot less bland than a lot of the clean food I have been eating lately. (Clean is relative as I am a powerlifter haha)
1.5 cups rice (personal preference regarding the type)
1 can of corn
1 can of black beans
1 can diced tomatoes
1 can chicken broth
Cook the rice, then add to a large pot and add all ingredients and cook for about 20 minutes on moderate heat. I season it with a little salt, pepper and garlic.
I like it because it is a cheap, easy and quick way to have a good addition to a variety of meals.
