Using 90/10 ground beef, grass fed beef, or ground turkey. Also...I like to make/consume them on the larger side...say 3 oz each..

It's reallyno different. Still want internal temperature to be 165* just like ground beef, cook times should be the same. It will add a great flavor and juiciness.

I usually do a 50/50 beef/pork mixture. I like to add some italian parsley, parmesan cheese, granulated garlic, onion powder and just a bit of cayenne to mine.

Another thing that will help is cooking them in a liquid instead of just baking them dry. I like to put some kind of tomato sauce/marinara sauce on them while they bake. Will help with moisture/tenderness and flavor.

I do pretty much the same. Main differences, diced onion and I use 1lb beef 1lb veal and 1lb pork and I pan fry in evoo.

bread crumbs

soak bread crumbs in milk then add them into your meatball mix, it really will make a big difference. Also as mentioned earlier, braising them will help as well. I like to braise them in tomato sauce.

This is the secret right here. Cut up a few slices of bread into chunks and soak in milk. Squeeze the excess milk out and add to your meat mix. If your looking for carb free you can just add a bit of milk to the meat mix, just be careful not to overdo it or the meatballs wont hold shape.
