4 Roughy Fillets
1 clove Garlic
1 table spoon chopped onion
1/4 cup chopped Green Pepper
1/4 cup chopped Red Pepper
Salt/Pepper/Oregano
1 table spoon Olive Oil
2 table spoon Chicken Stock
1/2 Fresh Lemon
Saute garlic, onions in olive oil for 3 minutes.
Add chopped peppers and seasoning and cook additional 3-5 minutes.
Add Roughy to the pan and brown on both sides.
Add Chicken stock after chicken is browned, cook and reduce.
Plate the fish adding remainder of pan on top and squeeze lemon over the top.
