Hey guys, a little about me to start, I'm not huge, I'm not a guru but I know a thing or two about how to make some tasty food that is pretty lean. I'm an ex fat guy, so I tended to over emphasize the diet part of training. Taste and variety are crucial to me;I just can't eat the same bland stuff day in, day out without falling off the wagon hard after two weeks or so. Here is one of the recipes I compiled into my little black book of dieting,I hope you enjoy. A grill and some spicy heat is the name of the game here, as well as simplicity.
First, you will need the following ingredients:
1/4 cup of pitted chopped green olives. Queen size
2 tablespoons capers
1 pint cherry tomatoes
1 handful fresh parsley and cilantro mix, chopped
Juice of 1 lime
1/4cup olive oil, extra virgin
Fresh jalapenos, other hot peppers if ya want
4 large snapper fillets (other firm white fish works great) about 1.5 to 2 lbs is ideal
Directions:
Heat grill to med heat. In a mixing bowl, combine olives, tomatoes, capers, parsley/cilantro, like juice, olive oil, jalapenos
Fold 4 sheets of aluminum foil on half lengthwise. Unfold and lay on counter. Season each fillet with salt and place on one side of the foil, parallel with the crease. Top each fillet with 1/4 of the salsa mix. Fold over the fish, roll up the edges to seal.
Place packets on the grill grate and close the lid. Cook about 10minutes til fillets are done through. Squeeze a little more like juice on top.
Per serving: roughly 400 cal, 42g protein, 5g carbs, 18g fast per serving. Enjoy!
