I made roasted potatoes in the oven a few nights back.

3 diced medium potatoes
1 TBS Olive Oil
1 Teaspoon season salt

Mix all in a bowl, spread out on a cookie sheet, bake in oven on 375F for approx. 45 minutes flipping them a few times about half way through.

Poke holes in it first so it doesn't explode. I usually go 3 minutes to start and then another 2 minutes. You'll be able to tell when it's done. Guess it depends on the size and how good the microwave is.

If I'm crunched for time I just wash em and dice them em up and eat the sweat potatoes raw. Or I'll just mash them. No butter or milk.

The absolute best tasting way (which isn't practical for many) is wrap them in tin foil, have a fire pit handy now. Let the fire die down to hot coal and bury the potatoes in there. Couple hours later you have yourself the best tasting potatoes on the planet. Mark my words!

Chop them into little cubes, drizzle some oil on there and then add your seasoning and throw em in a pan. Damn that shit is good!

Microwave and let sit in the hot water couple extra minutes. Seems to make it hold the moisture in better when you let it sit
