I am not the original inventor of this but if you love fried fish and try to stay clean for the most part this is where it's at....
Take cod, pollock, whiting (I've used all of these with success) defrost it and blot it dry with a paper towel. I would think white fish is the way to go with this but I've even used bass and it was great but I ain't picky.
Rice crispy cereal in a large zip lock bag, add salt, pepper and cayenne pepper. Crush them up well.
Using egg whites or whole eggs depending on your macros, cover the fish in the egg throw it in bag.
After coating your desired amount of fish, place them on wire racks(little racks placed on pan to slightly elevate them off the pan)
I like to cook at 400+ for crispier fish.
First time my wife made it for me I ate 3 pounds in a sitting lol.
Oh and I like to rub the wire racks with coconut oil to ensure they don't stick.
