Eggs - low carb or no carb

Eggs, fats, spices, are all fine. Maybe oats if necessary. I'm soooo sick of scrambled eggs!

Western Omelette always seems to work for me.

Bell peppers, Onions, Dice tomatoes, ham and cheese. top with sour cream

variation I like is adding pre-made Brushetta mix to it. you can find that in the sauce section.

How about a chorizo omlet.........(mexican sausage) spicy but good! sautee sausage, onins, peppers and mix 4-6 eggs into the mix. Fold in some low-fat cheese and you got a nice little treat.

Meat lovers omlet- sausage, bacon and ground beef. sautee and add onions and some hashbrowns when sauteeing and then fold in 4-6 eggs...........then fold in low fat cheese. can add salt& pepper and garlic pwder and onion pwder to egg mix before folding in................taste real good!

Birds nest- take whole wheat toast cut hole in it.........after toasting the breard and cut hole ......crack 1-2 eggs in center and cook overeasy.......flip if you want.............something old school there.

a new twist on deviled eggs....
take 12 eggs and hard boil them.
peel them and split them in half from top to bottom.
take half the yolks and put them in a blender.
add 1/4 of a whole roasted red pepper
paprika
diced shallot
1/2 tsp dry mustard.
now pulse the blender and slowly add olive oil until you make the mixture into a toothpaste like consistancy.
spon the mixture into the egg halvs and enjoy!

I tell ya what I love on scrambled eggs, is fresh salsa or pico de gallo from the produce section. I could eat that forever. Goes great with some black beans and a slice of avocado. Check the ingredients on the salsa because some put sugar in theirs and that changes it to catsup in my book.
 
quiche!

1 (10 ounce) package frozen chopped spinach, thawed
1 bunch green onions, finely chopped (white parts only)
4 eggs, beaten
1 (16 ounce) package cottage cheese
2 cups shredded Cheddar cheese
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch pie or quiche pan.
Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in green onions, eggs, cottage cheese and Cheddar cheese. Pour mixture into prepared pan.
Bake uncovered in preheated oven for 45 minutes. Remove from oven and sprinkle with Romano cheese. Return to oven and bake for an additional 15 minutes, until eggs are set.
