Oat Bran And Eggs
This may sound not tasty, but it certainly is very tasty. It is my signature dish that I cook for people.
This can be prepared low calorie/low fat/low carb, or it can be prepared higher calorie/higher fat/higher carb.
This is the base:
1) 4-6 egg whites, egg yolks optional
Peppers, Onion, Nopales, Spinach
1a) Scramble the eggs with onion, peppers, nopales, spinach, or other vegetables of your choosing.
1b) I will sometimes add in some fresh hummus, if I have some more calories to spare. Once the eggs are close to fully cooked, add in the hummus and continue the scramble.
1c) If more carbs are allowed, potatoes are a nice addition. I like to either use diced potatoes or string hashbrowns.
1d) Meat can also be added to the mix. Sometimes I will add lean ground beef, lean ground turkey, lean steak, etc...
2) 30g Oat Bran, use more if you choose.
2a) Cook the oatbran
2c) While the oatbran is hot, drop some cheese in to the oat bran. Stir the cheese in the oat bran, it will melt fast. I like to use laughing cow wedges, shredded cheddar, feta, etc... Use whatever cheese you like.
2d) Stir in salt and pepper to taste.
3) Now you are going to pour the egg/veggie/potato/meat scramble in to the bowl of at bran and mix.
4) Now you have Sonic's Oat Bran and Eggs.
