I make this stuff and carry it around in a tupperware... it doesnt melt, tastes good cold or warm, and really can pack in the carbs.....
3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup Olive oil
3/4 teaspoon salt
1 cup raisins
1 tablespoon cinnamon
1 teaspoon vanilla extract
1/2 cup honey
combine oats, brown sugar and nuts in bowl..
combine the rest of the ingredients in a seperate bowl, and then slowly combine the two bowls by stirring and coating, then stirring and then coating... adding the liquid mixture slowly to ensure even coating..
Bake at 250 for 45 minutes or longer if you like it crispier... Stir once or twice...
goes great with yogurt, or milk, or just by itself.
add dried fruit about 5 minutes before it finishes otherwise it gets too dried out.
